Ingredients
1 teaspoon baking soda
½ teaspoon salt
1 Tablespoon ground ginger
1 Tablespoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground allspice
10 Tablespoon unsalted butter room temp. (1 ¼ stick of butter)
¾ cup of packed light or dark brown sugar
⅔ cup of molasses. (I use the Grandma’s brand)
1 egg
1 teaspoon pure vanilla extract
Instructions
In a large bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, allspice, and cloves.
In a stand mixer with the paddle attachment or a new bowl with a handheld mixer, beat the butter on medium speed until smooth and creamy.
Add the brown sugar and molasses to the butter and combine on medium high until creamy.
Beat in the egg and vanilla extract on high speed for around two minutes. If the butter separates, don’t panic, just keep going.
Add the flour mixture from earlier to the wet mixture and beat on low speed until combined. (it might be a little thick)
Divide dough in half and place each onto a sheet and then saran wrap it.
Chill for around 2 hours and 30 minutes
Roll out dough and cut into shapes!
Cook in the oven for 9-10 minutes at 350F

Make sure to chill for around 2 hours and 30 minutes, Sally recommends 3 hours, but I tried it with less time and it worked just fine.
