(MAKES 1-2 PIES)
Ingredients
Unbaked Pie crust (7-10 inches)
3 separated eggs (you will need the whites and the yolks)
16 ounce pumpkin puree can
1 cup evaporated milk
1 cup granulated sugar
1 teaspoon cinnamon
½ teaspoon ginger
¼ nutmeg
¼ teaspoon ground cloves
Instructions
Make a pie crust! You can make one or buy one, either works. Also preheat the oven to 375F
In a stand mixer at high speed, beat egg whites until soft peaks form
In a different large bowl, mix the egg yolks, pumpkin puree, and the spices, sugar, and evaporated milk.
Gently fold the whites with the rest of the mixture.
Bake for around 45 minutes.
